Burgers are one of my all time favorite foods. They’re so simple and tasty, and every place makes them different. All the way from McDonalds simple patties to fancy burgers with the most flavorful fillings. I especially enjoy making vegetarian burgers so I decided to give you some vegetarian burger ideas.
The main part of the burger for me has always been the patties and cheese. Everything else can be added to taste – bread, tomatoes, pickles, cucumbers, onions, sauces etc. When making vegetarian burgers, I’ve compiled a few amazing veggie pattie recipes.
Here are some of my vegetarian burger ideas!
Falafel inspired patties from chickpeas
When thinking of vegetarian burger ideas, you can’t forget the classic falafel recipe!
One of the oriental delicacies worth tasting are these patties made of chickpeas, beans and spices. This is a good way to replace meat and get a yummy version of your favorite burger. I’m sure this burger pattie will be loved by many – both vegetarians and meat eaters.
You will be needing:
- 400 g chickpeas;
- 300 g beans;
- 2 garlic cloves;
- 3 tbsp. Harissa paste
- 1 tbsp. cumin;
- 1 tbsp. coriander;
- Fresh parsley and coriander;
- 1 tbsp. salt;
- 4 onions;
- 2 tbsp. flour;
- 1 tbsp. baking powder;
- 4 tbsp. sesame seeds;
- Oil for frying.
Here’s how to make it:
- Get your chickpeas and beans, and put them in a blender and grind.
- Add chopped garlic cloves, Harissa paste, spices and chopped onions to the mass. Blend everything until the ingredients are well mixed.
- Then stir in the fresh parsley and the coriander, flour and put patties to cool in the refrigerator for about 30 minutes.
- When this is done, divide the mass into 12 equal patties rolled out 5-6 centimeters in diameter. Then cool them again a little and sprinkle with sesame seeds, pressing them lightly to stick.
- Heat a little oil in a pan and fry the falafel for three minutes on each side of the patties until crisp and golden. Bake about half of all the patties on the pan at the same time so that they can be easily turned over.
- Dry the finished patties on a kitchen towel. They’re ready to be put in a burger!
Patties from broccoli
Broccoli is one of the most underrated vegetables out there – in my opinion. When cooked properly with added spices, it is super yummy and I am here to prove my point. I encourage you to try this recipe and be amazed at how tasty and meanwhile healthy this burger will be!
You will be needing:
- 300g broccoli;
- 70ml milk;
- 2 eggs;
- 4 tbsp. of flour;
- Oil for frying;
- Salt and pepper.
Here’s how to make it:
- Wash your broccoli, separate it and boil in salt water for about 5 minutes. You don’t want to over-boil it, but also don’t leave it under-boiled and crispy. Let it cool off and then place your boiled broccoli in the blender. Add milk to the broccoli, then eggs.
- Place the batter in the bowl, add salt and pepper to taste.
- Add flour and mix it in carefully.
- Make sure your pan is hot, then fry your patties in oil. Create little patties in the pan and make sure they’re golden brown and crispy from both sides.
- Enjoy the patties in your burgers!

Patties from couscous and zucchini
Zucchini is another veggie ingredient that I absolutely love! It’s fresh, tasty, juicy and super healthy. It is known for having very small amounts of calories so this burger will be not only tasty but also very beneficial to you. This is one of those vegetarian burger ideas that you wouldn’t think are good but it ends up being amazing!
To make this patty more tasty and not leave you hungry, I add a bit of caucuses. It makes this patty more meaty and leaves you satisfied for a long time.
You will be needing:
- 180 g of couscous;
- 200 ml of boiling water or veggie broth;
- 1 egg;
- 3 tbsp. of plain yoghurt;
- 1 zucchini;
- A handful of parsley;
- Oil for frying.
Here’s how to make it:
- Put your couscous in a bowl and pour boiling water or broth onto it. Place the lid or plate on the bowl and allow the couscous to swell.
- Meanwhile, beat the egg in a bowl. Grate your zucchini and finely chop the fresh parsley.
- When the couscous is all soft and ready, add zucchini, parsley, egg and yogurt to the batter. Mix everything thoroughly to form a gorgeous mass.
- For patties from the mass of couscous and zucchini.
- Fry in a well-heated pan until golden on each side.
- Serve with sour cream or a light yogurt sauce.
